We are continuing with our World Health Day 2016 celebrations by featuring another one of our healthy and nutritious recipes. As stated previously, these recipes are often included on our scrumptious menus.
Here is our recipe for a healthy, no carb salmon dish which we hope you will try at home and love just as much as our residents do.
Cajun Salmon Fillets with Charred Vegetables
Serves 4
- 400g fresh salmon fillet
- 1tbsp. olive oil
- 1tbsp. Cajun seasoning
- 1 bunch of asparagus
- 150g Chantilly carrots
- 1 red onion
- 1red pepper
- 1 yellow pepper
- 1 fresh lemon
- 2 cloves of garlic
Method
- Preheat oven to 180C
- Take the salmon fillet and cut into 4 portions
- Drizzle with olive oil and rub in the Cajun seasoning and set aside
- Chop all the vegetables into equal pieces separately
- Drizzle the carrots with a little olive oil, salt and pepper and place in the oven for 15 minutes
- Place the remaining ingredients in with the carrots, stir well and roast for another 15 minutes
- Take a griddle pan or heavy based pan and place on the hob to heat
- Once the pan is really hot, place the salmon fillets in and colour both sides (approximately 2-3 minutes)
- Place the salmon on top of the roasted vegetables and put back into the oven for a further 6-7 minutes until cooked
- Divide the vegetables into 4 bowls and place a piece of salmon on top
- Cut the lemon in half and squeeze over the salmon
- Serve with a small lemon wedge
